Sapphires do not have standard size-to-weight ratios like diamonds. This is because diamonds are cut into standard proportions. Sapphires cut in a way that we get the best colour possible. A light colour sapphire can get a better colour if cut a little bit deeper and a darker one can be made lighter by cutting shallower etc. Also, diamond is just carbon, a single element. But sapphire is a mineral so that different chemical compositions give them different colours and slightly different weights.
